Stonebeck Cheese (Nidderdale) — Andrew & Sally Hattan

Andrew (PhD in dairy nutrition and former farm manager) and Sally (NHS dentist and environmental steward) restore traditional cottage-industry cheesemaking at Low Riggs Farm, near Middlesmoor, Nidderdale (remote upland at ~900 ft). Using raw milk from their small herd of critically-endangered Northern Dairy Shorthorn cows grazing biodiverse meadows, they craft a seasonal (spring–autumn) farmhouse Wensleydale-style cheese called “Stonebeck.” Pressed in cloth and matured traditionally, the cheese offers a creamy, layered flavour, reflecting 1917–1930s recipes and local terroir. The farm participates in agri-environmental schemes to restore hay meadows, moorland and wildlife habitats, integrating biodiversity into their cheesemaking.
